To achieve it, they practiced ritual drinking of beverages made from agave. The gods of the drinks were called collectively centzon-totochin (400 rabbits) in Nahuatl. The number 400 was synonymous with "innumerable" and "uncountable". It is believed that the spirit of the 400 rabbits carries on in each bottle of this fine mezcal. Smooth, lightly smoky and easy-to-drink, 400 Conejos is perfect for those beginning their mezcal-drinking journey. (*Source: IWSR 2024) Variant Short Description 400 Conejos® Tobalá: Balanced citrus and herbal notes, enhanced by green fruits and smokiness from the cooked agave Variant Long Description In the towns of Tlacolula and Yautepec, in Mexico's renowned state of Oaxaca, carefully selected Espadín and Tobalá agaves are harvested and then cooked in traditional volcanic earth pit ovens. The wood is lit and volcanic rocks are placed on top of it in a pyramid shape. The oven is covered with cloth and earth and the piñas are cooked for 3 to 5 days. Once cooked, the piñas are milled using a stone pulled by a horse. The fermentation process then takes place in a wooden tub. 400 Conejos® Mezcal is double-distilled in copper pot stills and then bottled to enjoy at 80 proof.
