Production Process: After harvesting, the artisanal process of making Convite mezcal starts with a conical pit—where the magic happens—and intensifies the flavor of the agave right before being crushed in a stone wheel drawn by a mule called tahona. The mashed agave is then left to ferment naturally, with no chemical additives, and is distilled twice in copper pot stills. This ancient process has been performed successfully without the use of electricity for decades and was perfected as a science by the Hernandéz brothers, whose touch keeps making Convite the leading mezcal in Oaxaca.
