Short Form Brand Description Growing Wings Solera is a marriage of select ex-Oloroso sherry butts and ex-Bourbon barrels brought together. ABV (%) 63.9% Key Selling Point 1 Our barley is grown on the rich fertile plains of the South Island of New Zealand, then traditionally malted. Cardrona’s malted barley is milled on-site at the distillery and combined with pristine mountain water in a traditional single malt lauter mash tun. The wort is drawn into stainless steel washbacks and yeast added for a long, 70+ hour fermentation, fermenting the natural barley sugars in to wash. When the wash is ready, the liquid is double-distilled in a pair of hand-hammered Forsyth copper pot stills, bespoke to Cardrona, and the rich, sweet spirit filled into traditionally seasoned ex-sherry, ex-pinot noir or ex-bourbon casks before being laid to slumber and mature.
