| Long Description | Each Ensamble en Barro by Tío Rey is a one-of-a-kind blend that will never be replicated, resulting in a flavor unique to that batch. Every bottle is a tribute to Tío Rey’s craftsmanship and deep-rooted tradition. Based in the lush mountain valley of Sola de Vega, Tío Rey comes from a lineage of mezcaleros stretching back generations. The region’s cooler climate and nutrient-rich soil allow him to cultivate over 15 varieties of agave. With pure spring water, healthy soil, and ancestral methods, Tío Rey produces rich, expressive mezcals.
Vago's Ensamble en Barro by Tío Rey is made using fully ancestral techniques, with the agave blend varying from batch to batch. Agave are roasted in classic earthen ovens before being hand ground with wooden mallets, which at times can take up to 12 hours. After crushing, agave is fermented in open air, pine-wood vats for roughly a week. Tío Rey then uses a series of clay pots called "ollas de barro" where the agave is double-distilled. The second run carefully seperates the liquid into heads (puntas), heart, and tails (colas). No water is added post-distillation, instead, balance is achieved by blending precise portions of heads and tails based on taste and smell. While intense, ancestral mezcal is highly coveted as a result of the mezcaleros' incredible craftsmanship and percision.
The flavor profile of Ensamble en Barro varies by batch, depending on the agave used. In general, it tends to carry earthy, savory notes of dried stone fruit, wet soil and grasses, molasses, and salt. |
