| Long Description | Tequila Ocho Extra Añejo is a rare expression that is gently aged for 3 years in ex-American whiskey barrels, bringing an unparalleled sipping tequila. These barrels have had several previous fillings of tequila, rendering them more ‘seasoned,’ or mature. The result is a tequila not overly influenced by the oak, allowing for the agave profile to shine, simply kissed with a cooked agave note. Our latest vintage is a 2021 harvest from rancho La Ladera. Previous vintages have included rancho La Latilla in 2015, rancho La Magueyera in 2014, rancho El Refugio in 2012, and rancho Cerrito San August in 2009.
Like all of Tequila Ocho, only three ingredients are used: agave, natural airborne yeast, and water. Production is done the slow, artisanal way with patience in each step. Solely overripe agaves are harvested from Los Altos, or the Highlands, before being slow-cooked in brick ovens for 48 hours and laid to cool for another 24 hours. The agaves are roller-mill crushed, fermented using natural airborne yeast, and double-pot distilled at low temperatures, first in stainless steel with copper components, second in full copper pots. Extra Añejo is then aged for three years in seasoned ex-American whiskey barrels.
On the nose, it offers notes of dried fruits, dark chocolate, salted caramel, vanilla, and fresh oak. The palate is rich and complex with cooked agave, roasted coffee, nuts, orange peel, and fresh oak. The finish is long-lasting vanilla, coffee, and oak with an intense cooked agave, round mouthfeel. |
