This 43% ABV Espadín is crafted in Tapanala, Oaxaca, on a high plateau in the Sierra Sur mountains. Fermented and proofed with nearby spring water that supports the community, it offers a deepened sense of terroir in each pour. This expression, made by the sons of Joel Barriga, carries the bright agave and fruit-forward, almost tropical profile his mezcals are known for. In addition to a sessionable sip, this expression is perfect for artisanal mezcal cocktailing.
El Manantial translates to "the spring," a direct nod to the local spring water near Tapanala, not far from the Barriga family palenque, where water is harvested to produce this expression. The use of the spring dates back to the Zapotec era and now lives on with the Barrigas. The spring water gives this mezcal a softer, gentler, and sweeter profile. It contributes to the tropical, creamy, and mineral palate of this expression.
El Manantial is made from 100% fully mature Espadín. The agave is roasted in underground, conical pits before being fermented in open-air, wooden vats by natural airborne yeast. It is distilled the artisanal way in copper stills by the sons of Don Joel Barriga. Lastly, the liquid is proofed with spring water to 43% abv.
