This year, we headed to France for the 2025 Distiller’s Cut. To the south of France, to be exact and to be even more precise, the Camargue region. Among other things, the alluvial plain of Provence is known for its exceptional salt. To collect the Camargue’s White gold, seawater is directed through a network of channels and pools so that the salt marshes dry. The warmed marsh winds up evaporating 90% of the salt from fresh water, leaving behind salt crystals also known as Fleur de Sel that settle at the bottom of the marshes. Salt farmers then harvest them using a handcrafted skimming tool called a lousse. The 48th ingredient of our once-again special Distiller’s Cut for 2025 once again comes from the Camargue region Camargue Fleur de Sel Carefully selected by hand. Finished by infusing & harvesting Fleur de Sel and distilling a cut of the Monkey 47 hand-crafted and hand-distilled gin.
