Short Product Description Highlands 41 Cabernet Sauvignon is a single vineyard wine from our Creston Highlands Vineyard in the Paso Robles appellation. Aged in small oak barrels for 10 months, this deeply colored Cabernet Sauvignon exhibits a fountain of blueberry, blackberry and other mature fruits that give the wine a rich, concentrated mouthfeel. Round on the mid-palate, the wine has soft, well-integrated tannins, balanced acidity and a spicy finish that lasts and lasts. Paso Robles winery solar panels provide 100% of the needed electricity, and wastewater is effectively reclaimed and recycled for additional uses. Long Product Description Highlands 41 Cabernet Sauvignon is a bold red wine crafted exclusively from Cabernet Sauvignon grapes grown in our renowned Creston Highlands Vineyard, nestled within the Paso Robles appellation on California's Central Coast. This vineyard, with its breathtaking steep terrain, is situated in the rolling hills of the Creston District AVA—a celebrated sub-appellation known for producing exceptional red Bordeaux varietals. The vineyard's low-vigor soils, rich with calcareous marine deposits and fossilized shells, along with the cooling afternoon breezes from the Templeton Gap, create the ideal conditions for cultivating premium Cabernet Sauvignon. These unique terroir characteristics yield a wine that is as distinct as it is delectable. Aged for 10 months in small oak barrels, this dark red wine captivates the senses with an opulent bouquet of ripe blueberry, blackberry, and other mature fruits. Its rich, concentrated mouthfeel is complemented by round, velvety tannins, balanced acidity, and a long, spicy finish. This smooth California Cabernet is perfect for those who appreciate the artistry of American Cabernet Sauvignon wines. At 13.9% ABV, Highlands 41 Cabernet Sauvignon pairs beautifully with grilled tuna, vegetable lasagna, turkey burgers, and carne asada tacos. Whether you're savoring a glass on its own or alongside a delicious meal, this wine delivers an unforgettable experience that showcases the very best of California vineyards and Central Coast wines.
