| Tasting notes | The 2021 Noble One Chardonnay has bright, fresh acidity with notes of ripe stone fruit including peaches and apricots. Cold fermented at 55°F with malolactic fermentation to add body, the wine is aged for 9 months in stainless steel on lees, which produces a brioche characteristic. A fresh snapshot of what Chardonnay can taste like, this full Chardonnay is varietally driven with good structure and maintained freshness. |
